Summer Recipes I would like to try.... Grilled Scallops & Pineapple


I am a SEAFOOD nut.. I love Seafood.. I wished I lived on the beach just to get the fresh catch.. *I don't like going to the beach though*

Here is a recipe I found in a magazine that I will like to try.. It is summer and we all know that is the grilling season.. So I was going to share with you all some of  ideas for the Summer Barbie... I choose this one cause another favorite of mines is PINEAPPLE.. YUM!

Grilled Scallops & Pineapple

Prep Time: 15 minutes
Cooking time: 8 minutes

1 tablespoon of Olive Oil
2 tablespoon lime juice
1 tablespoon soy sauce
1/4 teaspoon cayenne pepper
1 lb large peeled scallops rinsed and dried
2 tablespoons honey or brown sugar (me I might add both)
2 tablespoon of chopped cilantro
1 medium pineapple cut into chunks (please use fresh pineapple)
You can garnish with cilantro or mint, and  lime zest

In a small bowl, combine oil, lime juice, soy sauce and cayenne pepper; stir to blend.
Add scallops and marinate about 10 minutes.
Brush the pineapple honey or sugar..
Add Scallops on the skewers and place on the grill..Cook and until crust forms.. about 3 to 4 minutes. Turned and then do the same on the other side. The last 3 minutes add the pineapple and sprinkle with cilantro....

The best part one skewer will be around 5 grams of fat...

OOOwee Chocoladee Brownies (Triple Chocolate Chunk Brownies)



This is my favorite Sweet Treat.. It is quick and easy.. You just gotta love Duncan Hines.. :)
I just add some extras... Here is what you need....

2 Boxes of Ducan Hines Triple Chocolate Chunk Brownie Mix..
1/2 cup of Chocolate Chip Morsels
1 cup of Triple Chocolate Betty Crocker Creamy Icing

Now you make the Brownies according to the box.. You can add or cut the recipe...
After you mix the items add the Chocolate Chip Morsels..
Then put it in a 9x11 pan (baking dish)
Cook  20-25 mins
Then take it out the oven.. While the Brownies is still hot cover it with the icing... 
It will melt and at extra gooey good brownie..

Collards and Smoked Sausage

Now we are talking about one of my FAVORITE Vegetables.. Collards.. Yes that big green leaf that is part of the Cabbage Family.. I swear I have so many different ways I cook these babies...  I am going to share one of my odd ball ones.. It makes sense doesn't it..
I love Southern Cooking.. I think we know how to spice it up.. I try to cut down on grease when ever possible...
So here is a little healthier way to eat them...



You will need:
1lb Collards (washed and cut)
1 pack of Butterball Smoked Turkey Sausage..( You can use pork or beef)
1 teaspoon of salt
1 dash of Apple Cider Vinegar








You will bring your pot of water to a boil. Add Salt and Collards.. Let them cook to your desired texture... Before you cut them off add cut pieces of Turkey Sausage. You will let that cook until done.. I think you should add the sausage about 20 minutes before you cut off your Collards..
Now this will add the smoke flavor and some added grease... This way you cut out the ham and the fatback..
Add the Apple Cider Vinegar for extra taste...

Mah Potato Salad Casserole


This is one of my favorite recipes.. I actually got this recipe back when I was in high school.. I tinkered with it for YEARS... It has now became a Family Favorite.. Now it is a must from time to time...

8 medium size Red Potatoes
1 small onion
2 cups of Milk
2 Tablespoons of Flour
2 Tablespoons of Butter
2 cups of Mayonnaise
1 teaspoon Mustard

Wash, peel, and diced the potatoes.. Put them in boiling water until tender..Remove from stove and drain..
Wash and chop onion and  use the butter and saute the onions.. Once that it is finish add the flour and stir until  onions are coated. Then remove from heat and slowly add the milk.. Once it get thickens add Mayonnaise and Mustard.. 
Then put potatoes in the dish and add the mixture and mix.. Put in the oven on 350 and cook for 30 mins (varies on stove) once the top is sorta golden take it out the oven...

Sangria... Mah Style...

Well as you all know it is going to be a HOT SUMMER... What better way to chill out with a fruity glass of Sangria...

I totally LOVE this stuff... I make it a tad bit different from the rest.. It still is a good refreshing entertaining drink...

1 Bottle of Wine... ( I use Mogen David Blackberry) it gives it a GREAT TASTE... The thing about Sangria you can use any fruit you like.. Here is what I use....

1 Lemon to slice and 1 Lemon to squeeze juice from..
1 Lime to slice and 1 Lime to squeeze juice from
1 Orange to slice and 1 Orange to squeeze juice from
1 16 oz jar of Cherries
2 Tablespoons of Red Grenadine
4 shots of Apple Schnapps
2 Tablespoons of Sugar
5 cups Cherry 7up (I use) or Ginger Ale

If you are making it in a pitcher you can cut it down some... You can even double it if you are making in a punch bowl...

Mix all ingredients and then let it chill for 6 hours or more.. Then longer you like it marinate the better it taste.. Enjoy

Another Party Favorite... Purple Rain...

This drink has been a favorite since I made it up.. My friends named it.. I am always trying new ways to serve drinks when we have our get togethers... We named it "Purple Rain".. I tell you it is so  good.. Well if you enjoy sweet, fruity drinks...

Here are the ingredients... (again not good on measurements) This goes in my punch bowl... You can eye how much your container will hold...


  • Welch's Grape Juice
  • Blue Curacao
  • Coconut Rum
  • Pineapple Vodka
  • Simple Syrup
  • Pineapple Juice


Now this is the tricky part... You will only need a half cup of Pineapple Juice and Simple Syrup to taste...

Then in the punch bowl  add ice... If it is too strong always add more juice...

Ghetto Eggrolls.. Is what I call them (A Party Favorite)

This is a favorite among my friends... I am not taken credit for this recipe... My friend Latonya Owens started this.. I am not sure where she got the recipe from.. Yet I make them too.. I wanted you all to try them out also...

You will need the following items... (note: I am not BIG on measurements... I let you use your eyes and what not)...

1 package of Egg Roll Wrappers
1 .lb of Ground Beef
1 lb bag of Mixed Vegetables
A bag of coleslaw mix
For season to taste any Oriental Sauce.. I use Teriyaki or Sweet Chili Sauce...
Oil for deep frying
side bowl of water...

You will cook the Ground Beef until brown and drain the fat grease.. Then you add the Vegetables.. Once the Veggies begin to cook you will add the slaw and the Sauce..  Once cooked you will being to fill the Wrappers  (according to the wrapper directions.. I normally do 2 tablespoons) .. Once filled and rolled moist the ends with a dab of water. Then you will place them in the deep fryer or deep pan with hot grease..  Fry them until golden brown...

Sundays... The day for Family and a Good Meal...

On Sunday's especially here in the South Families tend to get together for a good meal... I am one of those firm believers that food and family goes hand and hand.  I love cooking and I love the time I get to spend with those closest to me. Today is Father's Day.. I would like to wish all the Father's in the World a happy day...

My menu today is.. Double Battered Cubed Steak, Yellow Rice, Broccoli Casserole, and Sauteed Squash.. I haven't figured out what type of bread I will be severing.. I am not Big on Bread anyway...

So once everyone gets out of church and head to the house.. I hope that all of them will enjoy the meal I prepared....

Ham Perlow (Greasy Rice)

I tried this back when I went to the low country with my boyfriend at the time. His mother made this and I like went crazy over it. He wouldn't never tell me how to make it. So I tried it myself. It was good, I think better than his mother. So once I told him how I made it he said I was right... LOL

You know I am a cook when I can taste something then go and make it myself without the recipe. It is easy and very simple though.

I have to let you know this first off.. You got to be a lover of Ham.


Ham Perlow... Greasy Rice is what some call it in the low country of South Carolina.

2lb to 5lb Ham (Butt or Shank)
3 or 4 cups of Uncle Bens Rice
1/2 cup Chopped Onions (optional)
1 ts of Pepper
1 ts of Salt (optional)

Bake the Ham for 1 to 2 hours depending on the size of the ham.
Save the juices.
Then pour the juices into a pot then add rice, onions, salt, and pepper.
While the rice is cooking break apart the ham.
Right before the rice is down add the ham. Then let it cook for about 2 to 3 mins...
