3/4 cup Dutch processed cocoa powder
1/2 teaspoon salt
8 large eggs, at room temperature
2 egg large yolks, at room temperature
1 tablespoon pure vanilla extract
2 teaspoons instant espresso powder
12 ounces unsalted butter (3 sticks), room temperature
2 1/2 cups sugar
6 ounces bittersweet chocolate, roughly chopped
Chocolate Glaze:
6 ounces bittersweet or semisweet chocolate, finely chopped
8 tablespoons unsalted butter (1 stick)
1 tablespoon honey
Directions
Equipment: 10 cup bundt pan</div>

Place a rack in the middle of the oven and preheat to 350 degrees F. Butter and flour the bundt pan.</div>

Sift the flour, cocoa, and salt into a medium bowl. Whisk the eggs, yolks, vanilla, and espresso powder together into a bowl and set aside.</div>

In a heavy duty mixer, beat the butter with the paddle attachment, on medium speed for 1 minute, or until smooth. Gradually pour in the sugar, 1/4 cup at a time, until the butter begins to lighten, about 3 minutes. Scrape down the sides of the bowl with a rubber spatula and beat, on medium-high, until light and fluffy, about 4 minutes more.</div>

Adjust the mixer's speed to its lowest setting. Add 1/2 of the flour mixture and mix until completely absorbed before adding the rest. Scrape down the sides of the mixer then beat on medium-high for 30 seconds more.</div>

Adjust again to low speed and add half the egg mixture, mix until blended and smooth. Add the remaining egg mixture and beat until almost blended. Remove the bowl from the mixer, and fold in the chocolate by hand. Take care not to over mix the batter.</div>

Spoon the batter into the prepared pan and smooth the top with a spatula. Bake until a toothpick inserted into the center comes out clean, about 1 hour and 10 minutes.</div>

Cool the cake in the pan, on a rack for 10 minutes. Turn the cake out of the pan, and cool right side up on a rack. If not serving the same day, wrap in plastic wrap and store at room temperature. Glaze just before serving. Cake can be frozen for 1 month.</div>

For the glaze: Put all the ingredients in a microwave safe bowl or glass measuring cup. Melt at 50 percent power in the microwave until soft, about 1 minute. While warm, pour glaze over cooled cake and do not spread.</div>

When I say I LOVE Stewed Tomatoes and Okra... I (heart) it...<br />

I know that there are so many versions of this.. I think I make it as simple as possible.. You know that this cures a hangover also... I know a lot of people do this and make it like soup.. I don't.. Mine is really stewed.. You can put it on Rice or Mashed Potatoes...<br />
<br />
Ingredients:<br />

<li>3 cans of Stewed Tomatoes</li>
<li>1lb of Frozen Okra</li>
<li>3 Silces of Bacon</li>
<li>2 teaspoons of cornstarch</li>
<li>2 Tsp of Sugar</li>
<li>dash of garlic powder</li>
<li>dash of salt</li>
<li>dash of pepper</li>
</ul>

First cook the okra (drain it after cooking) A fry the bacon....(save the grease and bacon)</div>

You add the tomatoes and the other ingredients (not the cornstarch yet)... You then add the already cooked okra and bacon grease...Then once coming to a boil you slowly add the cornstarch until it get to the thickness you want.. </div>

Then let it cook for about 6 or 8 minutes...</div>

Serve and you can crumble and add the bacon....</div>

In a medium to large pot... (you will have to cook potatoes first just so you don't over cook the corn and the other ingredients..) You will add the butter onions, garlic, chives, bell pepper let them saute.. Then add your cornstarch until it thickens a little. Be sure not to let it burn or scorch.. Then you can add the milk, and then the other ingredients.. Let it simmer for about 10 to 15 minutes make sure you stir a few times. </div>

I am such a BIG FAN of Red Onions.. They smell and gives anything a strong onion flavor.. I <3 me some Onions.. :)<br />

To make this Great Sandwich you will need:<br />

<li>Butter (for frying the steak, and sauteing the onions...</li>

I did an extra beating on the Cube Steak to make the meat more thinner.. Season the meat and put in a hot skillet with butter... Let them brown on both sides.. It shouldn't take no longer than 3 to 5 minutes.. Once cooked take the meat out.. Add a little more butter and put in the onions.. Cooked onions until Caramelized.. </div>

*My kitchen trick- Get another skillet and heat it up and put your bread in it... Let it toast the sides to a pretty brown.. Once the showing side is nice and golden.. Add a little butter and flip the bread over... Let the butter heat up for a few seconds..*</div>

Peel and cut the Potatoes into quarter size chunks and boil them until tender (not) mushy..</div>

While the potatoes are cooking.. Chop and mixed all the other ingredients together.. </div>

After they cool add them to the mixture.. </div>

One day I was doing a small cook out for just the family. I went to the store several times and forgot Baked Beans more than once... What is a cook out without Baked Peas.. So I looked in to the cabinets.. I was like Hmmmm! This might be good.. Turns out the FAMILY LOVED it...<br />

<li><span style="background-color: white;">1 Can of Diced Tomatoes</span></li>
<li><span style="background-color: white;">1 Can of Tomato Sauce</span></li>
<li><span style="background-color: white;">1 medium fine chopped Onion</span></li>
<li><span style="background-color: white;">1 medium fine chopped green bell pepper</span></li>
<li><span style="background-color: white;">3 slices of thick Bacon</span></li>
<li><span style="background-color: white;">1/2 cup of Dark Brown Sugar</span></li>
<li><span style="background-color: white;">2 Tablespoons of Molasses</span></li>
<li><span style="background-color: white;">Dash of Salt and Pepper to taste...</span></li>

You would like to add the can of Potatoes around the last 10 to 15 minutes of cooking... After you had all the ingredients into the pot.. Normally people only use Turkey Necks for Thanksgiving Gravy or Stock for soups and Stews.. My mother used to make these and they were actually good.. I think that was how I started eating them... Since I am sharing Family Favorites here is something that has been served for family, parties, and friends...</div><div class="separator" style="clear: both; text-align: center;">You will need:</div><div class="separator" style="clear: both; text-align: center;">1 package of Turkey Necks (I tend to get those that are 5 to 6 a pack)</div><div class="separator" style="clear: both; text-align: center;">Creole Seasoning</div><div class="separator" style="clear: both; text-align: center;">Flour</div><div class="separator" style="clear: both; text-align: center;">Salt and Pepper (optional)</div><div class="separator" style="clear: both; text-align: center;">Oil for frying</div><div class="separator" style="clear: both; text-align: center;"><br />

Bring them to a boil and then cook them on low for 1hr to an 1hr in a half.. Basically until tender... After they cook drain water and let them cool off.. </div><div class="separator" style="clear: both; text-align: center;">You should have flour and add salt pepper to the flour.. Take the Turkey Necks and roll them in the flour and put in a pan of hot grease.. You will bring your pot of water to a boil. Add Salt and Collards.. Let them cook to your desired texture... Before you cut them off add cut pieces of Turkey Sausage. You will let that cook until done.. I think you should add the sausage about 20 minutes before you cut off your Collards..<br />
Now this will add the smoke flavor and some added grease... This way you cut out the ham and the fatback..<br />
Add the Apple Cider Vinegar for extra taste...<br />

1 teaspoon Mustard</div>

Wash, peel, and diced the potatoes.. Put them in boiling water until tender..Remove from stove and drain..</div>

Wash and chop onion and use the butter and saute the onions.. Once that it is finish add the flour and stir until onions are coated. Then remove from heat and slowly add the milk.. Once it get thickens add Mayonnaise and Mustard.. </div>

Then put potatoes in the dish and add the mixture and mix.. Put in the oven on 350 and cook for 30 mins (varies on stove) once the top is sorta golden take it out the oven...</div>

1 Bottle of Wine... ( I use Mogen David Blackberry) it gives it a GREAT TASTE... The thing about Sangria you can use any fruit you like.. Here is what I use....<br />

1 Lemon to slice and 1 Lemon to squeeze juice from..<br />
1 Lime to slice and 1 Lime to squeeze juice from<br />
1 Orange to slice and 1 Orange to squeeze juice from<br />
1 16 oz jar of Cherries<br />
2 Tablespoons of Red Grenadine<br />
4 shots of Apple Schnapps<br />
2 Tablespoons of Sugar<br />
5 cups Cherry 7up (I use) or Ginger Ale <br />

If you are making it in a pitcher you can cut it down some... You can even double it if you are making in a punch bowl...<br />

My menu today is.. Double Battered Cubed Steak, Yellow Rice, Broccoli Casserole, and Sauteed Squash.. I haven't figured out what type of bread I will be severing.. I am not Big on Bread anyway...<br />

So once everyone gets out of church and head to the house.. I hope that all of them will enjoy the meal I prepared....<br />
