Stewed Tomatoes and Orka



When I say I LOVE Stewed Tomatoes and Okra... I (heart) it...

I know that there are so many versions of this..  I think I make it as simple as possible.. You know that this cures a hangover also... I know a lot of people do this and make it like soup.. I don't.. Mine is really stewed.. You can put it on Rice or Mashed Potatoes...

Ingredients:

  • 3 cans of Stewed Tomatoes
  • 1lb of Frozen Okra
  • 3 Silces of Bacon
  • 2 teaspoons of cornstarch
  • 2 Tsp of Sugar
  • dash of garlic powder
  • dash of salt
  • dash of pepper

First cook the okra (drain it after cooking) A fry the bacon....(save the grease and bacon)
You add the tomatoes and the other ingredients (not the cornstarch yet)... You then add the already cooked okra and bacon grease...Then once coming to a boil you slowly add the cornstarch until it get to the thickness you want.. 

Then let it cook for about 6 or 8 minutes...

Serve and you can crumble and add the bacon....

*note always use your judgement when using my recipes... I am not a person who measures I eyeball..*

This will serve about 8 to 10 people.. It will serve more if you are adding it to top rice or mashed potatoes

This sounds like Low Country cuisine. Over some rice this has got to be the business.
