Stewed Tomatoes and Orka



When I say I LOVE Stewed Tomatoes and Okra... I (heart) it...

I know that there are so many versions of this..  I think I make it as simple as possible.. You know that this cures a hangover also... I know a lot of people do this and make it like soup.. I don't.. Mine is really stewed.. You can put it on Rice or Mashed Potatoes...

Ingredients:

  • 3 cans of Stewed Tomatoes
  • 1lb of Frozen Okra
  • 3 Silces of Bacon
  • 2 teaspoons of cornstarch
  • 2 Tsp of Sugar
  • dash of garlic powder
  • dash of salt
  • dash of pepper

First cook the okra (drain it after cooking) A fry the bacon....(save the grease and bacon)
You add the tomatoes and the other ingredients (not the cornstarch yet)... You then add the already cooked okra and bacon grease...Then once coming to a boil you slowly add the cornstarch until it get to the thickness you want.. 

Then let it cook for about 6 or 8 minutes...

Serve and you can crumble and add the bacon....

*note always use your judgement when using my recipes... I am not a person who measures I eyeball..*

This will serve about 8 to 10 people.. It will serve more if you are adding it to top rice or mashed potatoes

Fried Turkey Necks... My mother's Favorite....




You know being in the South we tend to eat almost EVERYTHING when it is Fried...  Normally people only use Turkey Necks for Thanksgiving Gravy or Stock for soups and Stews.. Well not in my household...
We like to experiment we things.. I know that I do... My mother used to make these and they were actually good.. I think  that was how I started eating them... Since I am sharing Family Favorites here is something that has been served for family, parties, and friends...
You will need:
1 package of Turkey Necks (I tend to get those that are 5 to 6 a pack)
Creole Seasoning
Flour
Salt and Pepper (optional)
Oil for frying

Rinse and cut Turkey necks in half (across)
Season them and  add to a pot of water.. Bring them to a boil and then cook them on low for 1hr to an 1hr in a half.. Basically until tender... After they cook drain water and let them cool off.. 
You should have flour and add salt pepper to the flour.. Take the Turkey Necks and roll them in the flour and  put in a pan of hot grease..  Let them fry on all sides until golden brown.. 
Then drain the grease and enjoy...

I will always add pictures to the finish product once I cook them again...

Mah Potato Salad Casserole


This is one of my favorite recipes.. I actually got this recipe back when I was in high school.. I tinkered with it for YEARS... It has now became a Family Favorite.. Now it is a must from time to time...

8 medium size Red Potatoes
1 small onion
2 cups of Milk
2 Tablespoons of Flour
2 Tablespoons of Butter
2 cups of Mayonnaise
1 teaspoon Mustard

Wash, peel, and diced the potatoes.. Put them in boiling water until tender..Remove from stove and drain..
Wash and chop onion and  use the butter and saute the onions.. Once that it is finish add the flour and stir until  onions are coated. Then remove from heat and slowly add the milk.. Once it get thickens add Mayonnaise and Mustard.. 
Then put potatoes in the dish and add the mixture and mix.. Put in the oven on 350 and cook for 30 mins (varies on stove) once the top is sorta golden take it out the oven...
