Sweet Potato Salad (Yams)..


This is one of my FAVORITE sides...  I had it before at my job..  I looked up the ingredients.. So one day I made it MY WAY.. I got to tell you all.. It was better than what I got at the store.. 
Family Loves it!! Yumm Yumm!

  • 5 to 6 medium Yams
  • 2 chopped Celery stalks
  • 1 medium chopped Red Onion
  • 1 Tablespoon of Chopped Pimento
  • 8oz of Sour Cream
  • 2/3 cup of Dukes Mayonnaise
  • 1 Tablespoon of Sugar
  • 2 teaspoons of Paprika
  • 2 dashes of Salt
  • 1 teaspoon of Garlic Powder

Peel and cut the Potatoes into quarter size chunks and boil them until tender (not) mushy..
While the potatoes are cooking.. Chop and mixed all the other ingredients together.. 

When the potatoes finish drain and let them cool.. 
After they cool add them to the mixture.. 
This serves about 6 to 7 people..

* I always estimate the measurement.. I do it to my liking of taste*

Non Traditional Candied Yams

My cousin made this dish once before. When she made it I didn't know you could mix the two together. So I being the person I am, I had to try it my way... (Now it don't look like the picture to the right). Yet this is so so good...
I call it my Non Traditional Candied Yams...



5-6 thick cut Sweet Potato Chunks
4-5 thick cut White Potato Chunks
1/3 cup Brown Sugar (you can use really how much you want)
3/4 cup White Sugar
1 Tablespoons of Nutmeg
1 Stick of Butter
1 cup of Water for Boiling

*I add more sugar and butter.. Just for my taste*

Add all that into a pot cover it up.. When it starts to boil uncover, until the Potatoes are tender...

You can add Cinnamon if you like.

Serves: 6-8

The funny thing about when I make this for people outside of the family, people tend not to want it. They think it is strange to eat sweet white potatoes.. Once they try it they are pretty much hooked like I was...

Mah Potato Salad Casserole


This is one of my favorite recipes.. I actually got this recipe back when I was in high school.. I tinkered with it for YEARS... It has now became a Family Favorite.. Now it is a must from time to time...

8 medium size Red Potatoes
1 small onion
2 cups of Milk
2 Tablespoons of Flour
2 Tablespoons of Butter
2 cups of Mayonnaise
1 teaspoon Mustard

Wash, peel, and diced the potatoes.. Put them in boiling water until tender..Remove from stove and drain..
Wash and chop onion and  use the butter and saute the onions.. Once that it is finish add the flour and stir until  onions are coated. Then remove from heat and slowly add the milk.. Once it get thickens add Mayonnaise and Mustard.. 
Then put potatoes in the dish and add the mixture and mix.. Put in the oven on 350 and cook for 30 mins (varies on stove) once the top is sorta golden take it out the oven...
