Easy Holiday Fudge!!

Who would have know...?
That the easiest way to make fudge would be with Cream Drops...

Last year a Co Worker was talking about Fudge...  I never been good at making fudge...
So she was telling me how to make it.. Ive been doing it ever since..

  • 3 Bags of Cream Drops
  • 1 Stick of Butter
Any Ingredient you want to add to it..
I normally use Pecans.. Peppermint crushes...I love doing Peanut Butter too..

You but the  Bags of Cream Drops in a Microwave safe bowl.
You add the 1 stick of butter...
Microwave it for 3 minutes or less if you have a high power microwave...
You then take it out and add what extras you want into a 8x8 square pan..
Then let cool until the Fudge has it fudge consistency..

See how easy that is..
Happy Holidays from

Corn Chowder

I LOVE THIS STUFF!!

You will need....
Ingredients:

  • 2 Cans of Cream Corn
  • 2 Cloves Crushed Garlic
  • 4 Chunk and Cooked Potatoes
  • 3 Cups of Milk
  • 1 Stick of Butter
  • Chopped Onions
  • Chopped Green Bell Pepper
  • 1 chopped Chives
  • Salt and Pepper to taste
  • 1 tablespoon of Cornstarch

As you all know I do not do exact measurements..

In a medium to large pot... (you will have to cook potatoes first just so you don't over cook the corn and the other ingredients..) You will add the butter onions, garlic, chives, bell pepper let them saute.. Then add your cornstarch until it thickens a little. Be sure not to let it burn or scorch.. Then you can add the milk, and then the other ingredients.. Let it simmer for about 10  to 15 minutes make sure you stir a few times.

This will serve about 5 to 8...

Enjoy....

Smothered Steak Sandwich

I made this just for Brunch this morning for a friend.. I just had to share it with you all..
It was a beautiful photo.. I believe that I might just become a Sandwich Queen... LOL

I am such a BIG FAN of Red Onions.. They smell and gives anything a strong onion flavor.. I <3 me some Onions.. :)

To make this Great Sandwich you will need:

  • Cube Steak
  • 1 Red Onion
  • Sliced Cheese of your choice
  • Butter (for frying the steak, and sauteing the onions...
  • Bread
  • Salt
  • Pepper.. I used white pepper
  • Garlic Powder

I did an extra beating on the Cube Steak to make the meat more thinner.. Season the meat and put in a hot skillet with butter... Let them brown on both sides.. It shouldn't take no longer than 3 to 5 minutes.. Once cooked take the meat out.. Add a little more butter and put in the onions.. Cooked onions until Caramelized..

*My kitchen trick- Get another skillet and heat it up and put your bread in it... Let it toast the sides to a pretty brown.. Once the showing side is nice and golden.. Add a little butter and flip the bread over... Let the butter heat up for a few seconds..*

Once the bread is ready.. Just pile it on...  This was a very good sandwich...

Sweet Potato Salad (Yams)..

This is one of my FAVORITE sides...  I had it before at my job..  I looked up the ingredients.. So one day I made it MY WAY.. I got to tell you all.. It was better than what I got at the store..
Family Loves it!! Yumm Yumm!

  • 5 to 6 medium Yams
  • 2 chopped Celery stalks
  • 1 medium chopped Red Onion
  • 1 Tablespoon of Chopped Pimento
  • 8oz of Sour Cream
  • 2/3 cup of Dukes Mayonnaise
  • 1 Tablespoon of Sugar
  • 2 teaspoons of Paprika
  • 2 dashes of Salt
  • 1 teaspoon of Garlic Powder

Peel and cut the Potatoes into quarter size chunks and boil them until tender (not) mushy..
While the potatoes are cooking.. Chop and mixed all the other ingredients together..

When the potatoes finish drain and let them cool..
After they cool add them to the mixture..
This serves about 6 to 7 people..

* I always estimate the measurement.. I do it to my liking of taste*

beginning and ending with the flour mixture. Beat the egg whites at high speed with an electric mixer until foamy.
Gently fold into the butter mixture. Spoon into the (butter the pan with soft butter and sprinkle a little flour)

Let cool in the pan for 10 minutes. Remove from the pan...

The icing is 4 cups of Powdered Sugar and 1 to 2 cups of milk... It is all how thick you want your icing.. Warm on the stove
top gradually stiring so it doesnt stick or harden...
